Protecting public health from BSE risks
CANADA - The Government of Canada is addressing bovine spongiform encephalopathy (BSE) risks from human health and animal health perspectives. On the human health side, the meat inspection system in Canada is designed to assure the safety of meat products. Most important with respect to BSE is the requirement for specified risk material (SRM) to be removed from all cattle slaughtered for human food. SRM are tissues that, in affected cattle, contain the BSE agent. Removing these tissues from the food supply is internationally recognized as the best way to protect human health from BSE.Source: ParrySoundNorthStar
