Mozzarella Production Lower in February
US - Total cheese production in February 2012 reached 857.8 million pounds, up 2.6 per cent (adjusted for Leap Day) vs. last year but just 0.7 per cent greater than January 2012 on a daily average basis, writes Mary Ledman, Sara Dorland, Sarina Sharp and Karen Endres.American cheese production

down 0.8 per cent on a daily average
basis vs. January 2012. A seasonal a similar trend 2011.
It is interesting to note that three
key cheese-producing states: Idaho,
New Mexico and New York posted
decreases in total cheese production
in February 2012 vs. January 2012
on a daily average basis.
Idaho
reported the largest daily average
decrease of 6.0 per cent followed by New
Mexico with a 2.6 per cent decline and New
York with just a 0.2 per cent drop (see chart
above). Lower cheese production in
Idaho and New Mexico helps explain why production of lactose and whey
protein concentrate 50 per cent to 89.9 per cent was
down 0.7 per cent and 1.8 per cent, respectively in
February on a daily average basis as
some of the largest manufactures of
those products are located in Idaho
and New Mexico.
CME cash dairy products markets
were quiet today. CME Cheddar
block and barrel cheese markets
settled unchanged at $1.4875/lb.
and $1.4600/lb., respectively with no
bids, offers or trades. The spot butter
market closed unchanged at $1.4300/
lb. after no trades. A single bid was left
on the board.
