"It is growing and is here to stay," said Johnson.

What many peope need to know about organic dairy products and production is that it is a production claim, it isn't a content claim.

"We are selling a production system," said Johnson.

When farmers want to become certified organic they need to choose a certification agency they can work with. Once then the agency reviews the application the producer may be asked for more information. Once the application is reviewed, the agency assigns an inspector to make sure producers are following the guidelines. The inspector writes a report and sends it to the agency and then they review it.

"Becoming certified organic is by no means an easy road," said Johnson. "The hardest part for organic dairy producers is their crops because the crop switch takes about three years."
