Humane Slaughtering

US - The Food Safety and Inspection Service (FSIS) has issued two Humane Interactive Knowledge Exchange (HIKE) scenarios to provide workers with tips for the humane handling and slaughtering of animals.

The first HIKE scenario provides instruction on how to verify humane stunning operations, which focuses on minimising 'double knocking'.

The second scenario provides instruction on how to verify that an establishment is:

  • handling animals with a minimum of excitement and discomfort.
  • not excessively using driving implements, especially electric prods, in order to minimise excitement and injury.
